So, I am not a gluten free person. But I have a friend with Hashimoto's Disease and her naturopath told her that it causes the body to attack itself. Namely the thyroid. The way it was explained to me, gluten is a mimic. With Hashimoto, if you eat gluten (again, being a mimic), the body attacks the gluten and causes all kinds of health issues. So one way to help yourself if you have Hashimoto is to not eat gluten. There is much more to it, but I bake. A lot. So I was so happy to learn I can use my starter to surprise her with sourdough bread. Thank you!
