The Apostle
The Apostle: $6.60
Characteristics: San Francisco tang with a deep sour after taste. Comes back to life quickly, ours does it in 3 days, but were kinda experts. Gives off a great aroma, lots of gas and the bread is well heavenly.
So whats in a name? In our original line up of sourdough starters we had The Beast. During Covid we released The Black Death. In 2023 our testing kitchen in Austin Texas actually created an amazing sourdough starter by combining 2 of our not released starters, Granny Z from San Francisco, im talking someones old grandmothers disgusting sourdough starter (one of the best) and Walt our first ever starter that came from the settlers days, both these sourdough yeasts are over 100 years old. You see we now have 20 sourdough starters in our archive. So we combine this one and that one and see if it creates something amazing over time, got to give the yeasts time to marry. Most of the time its meh and tossed. Now in Texas they seem to do everything really fast so when they combined Granny Z and Walt, it finally made the most amazing tasting bread, yes heavenly. One problem they used the whole batch of starter to make 6 loaves. What a bunch of goofs. Anyways, it just so happens that I was visiting them during this experiment and realized thank god that they still had a bit of the married starter dried out in the measuring cup they had used. I can bring any starter back to life all I need is a bit. Ok the process of resurrecting this starter took a bit more time than normal, but the master made it happen. Then the process goes on for about another year. Storing the starter, drying it out, reviving it over and over and yes baking bread with it. By Easter 2024 it was ready to be released and with it being so close to Easter the marketing team came up with the name The Apostle, we think were funny. But alas, things got busy and the release did not happen so we sat on it for another year. Then Easter 2025 yes lets release The Apostle, but again life got in the way. Such a disappointment. But then you know what happened the pope dies and the whole team goes lets do it. Release The Apostle on the day a new pope is chosen. So that is why it is first released on the exact day white smoke is seen from the chimney of the Sistine Chapel, in case you don’t know, that is the signal a new pope has been chosen.
