Family recipe from Oklahoma. Grandma used to make this for family reunions and special occasions. It's a coffee cake that can be tweaked to your liking. Everyone in our family makes it a little different, but none of us can make it like Grandma could!
The Batter:
levin 1c
melted butter 1/3 c
AP Flour 1 c
Sugar 1 c
egg, 1 beaten
Salt 1 tsp
Baking Soda 1tsp
cinnamon 1 tsp
vanilla paste, to taste (sub extract sparingly or omit)
ground ginger and nutmeg pinch, to taste
The Crust:
brown sugar 1/3 c
butter 2 Tbsp
flour 2 tsp
cinnamon 1 tsp
pecans, chopped handfull, if desired
Preheat oven at least one hour in advance to 350F.
Grease a small cake pan of your choice with shortening and dust with APF. (we use a 9x9 square, round works too, can even make cupcakes)
Start with a large bowl with levin, egg, and ROOM TEMP melted shortening (can sub oil or lard).
In a separate bowl. wisk together dry ingredients, then gradually add to the large bowl.
Once thoroughly combined, pour into cake pan.
Use a fork or pastry cutter to mix together crust ingredients and evenly disperse over the batter.
Let rest for 30 minutes.
Bake at 350 until cooked in center, about 30-35 minutes. (toothpick test)
Cool completely before slicing. Drizzle of glaze or frosting if you wanna.
