So need help with my Sammy. I'm not GF but know a lot so thought I would try. Came out flat. Followed recipes posted here too. Was it my started, my flour or just my GF skills. Also used Bob's red mill since the cup4cup has dairy and my HF peeps are also dairy free.

I’m also using bob’s red mill GF flour with xanthum gum. Tried with brown rice flour first but it didnt grow.
When the starter is active and has bubbles, it should double in size after feeding. It looks like from your picture that the starter isn’t active enough? The instructions suggest using a tablespoon of water to flour to activate it (1:1:1). I found that worked after 8 days. Now I use a scale. I measure the starter and then add equal parts GF flour to water. So if my starter is 30g, I add 30g GF flour and 30g water. I leave a loose lid on top, and keep an eye on it.
Have you had sucess with regular Sourdough and your starter?
